One of the recipes most frequently requested by guests of our Duluth bed and breakfast is the one for our Lemon Cream and Apricot Scones. Here it is. May they fill your home with the fragrance of good memories at the inn.

Lemon Cream & Apricot Scones

2 cups all purpose flour

1/4 cup plus 2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

3/4 cup chopped dried apricots

1 tablespoon, plus 1 teaspoon grated lemon peel

1 1/4 cups whipping cream

3 tablespoons unsalted butter, melted

Preheat oven to 425°F. Mix 2 cups flour, 1/4 cup sugar, 1 tablespoon baking powder and 1/2 teaspoon salt in large bowl. Stir in apricots and 1 tablespoon lemon peel. Add whipping cream and stir just until dough forms. Turn dough out onto lightly floured surface. Knead gently just until dough holds together. Form dough into 10 inch diameter, 1/2 inch thick round. Cut into 8 wedges. Transfer wedges to large baking sheet, spacing evenly (on parchment paper works nice). Combine remaining 2 tablespoons sugar and 1 teaspoon lemon peel in small bowl. Brush scones with melted butter. Sprinkle with sugar mixture. l Bake scones until light golden brown, about 15 minutes. Transfer to rack and cool slightly.

To make a appetizer size, one batch will make 40 – two bite scones. Bake for 12 minutes.

Wednesday Night Concerts by the Lake in Duluth

July 1 marks the start of the “Concerts by the Lake” series, a free outdoor musical event at Glensheen Manor. Music by the shores of Lake Superior starts at 7:30 pm. Dance, or bring a blanket and relax with a picnic while enjoying the view and the music of The Jim Melde Big Band. Guests at our Duluth Bed and Breakfast always enjoy this event, which is just up the lake from us.

We are honored to have been recently featured in The Woman Today, an online magazine. The article discusses the transformation of Solglimt from our family home to our family business, and the renovations we have recently completed.

Our home was built as a two-room cabin in 1910. It wasn’t much bigger when we purchased it 31 years ago, but we fell in love with its location on Park Point, by Lake Superior. Our growing three children inspired us to add-on to our home when we could, and once they moved out to start their own lives, we had a pretty good-sized house on our hands.

We decided to share our fabulous location with other folks, and 8 years ago we turned our house into this Canal Park MN bed and breakfast. We haven’t regretted a minute of it. In fact, we recently completed renovations so that we could welcome even more guests, and provide them with views of Lake Superior and the Canal. The Aerial Lift Bridge Suite and the Park Point Suite were built green,  encompassing as many environmentally friendly aspects as we could; perhaps the most fun aspect of the new building is the roof, which will eventually be made of sod.

We hope you will read the article, which can be found at The Woman Today. Being interviewed for it was fun for us – it brought up a lot of memories, and reminded us how far we have come. This has been a labor of love from the beginning, and we look forward to a long career as innkeepers of our new and improved Duluth bed and breakfast.

There are many perks to living on Lake Superior. We watch huge ships go by, looking like floating islands. We are lulled to sleep by the sound of water gently lapping on shore. Seabirds abound, waking us in the morning with their enthusiastic calls. Sunrises and sunsets are amazing to behold from our home at this Duluth Minnesota inn.

Living on the water is also convenient for small craft boating, such as kayaking or canoeing. When we want to go for a paddle, we simple drag the boat a short distance to the water’s edge and away we go. We encourage our guests to bring their own kayaks/canoes, but if you don’t have one and would still like to get out on the water, we recommend Positive Energy Outdoor (Ed)ventures. At our bed and breakfast in Duluth MN, you are invited to curl up by the fire in the Harbor View Suite or Kandinsky’s Loft. Lay in bed and wait for the sun to rise over Lake Superior in our Lake Superior Suite. When you feel ready to start the day, consider exploring a part of Lake Superior’s maritime history. The S.S. William A. Irvin and the Coast Guard Cutter Sundew are both open for touring, and invite you to experience life on the lakes. The S.S. William A. Irvin hauled iron ore and coal to many Great Lakes ports, often braving fierce storms in order to do so. Furthermore, the DECC notes that she provided comfort and elegance to dignitaries and guests who traveled the Lakes with her, the flagship of U.S. Steel’s Great Lakes Fleet.

The Sundew launched in 1944 in Duluth. She served as an ice breaker at several ports on Lake Michigan, tended buoys, and was involved in countless search and rescue operations. As you tour the Sundew you will learn about some of the lives and ships she saved.

The S.S. William A. Irvin is now open daily; the Coast Guard Cutter Sundew will be open daily after Memorial Day.
